Macos

Tacos are one of my FAVORITE foods of all time. I could eat 10 in one sitting! I know crazy right?!

So, when I decided to jump on this raw vegan detox I knew that I would miss my taco tuesdays and I would need to find a good alternative to satisfy me on taco nights.

Well, thanks to Pinterest I found some great recipes to make ‘taco meat’, which I crafted into my own recipe that I’m lovingly calling macos. I was really skeptical when I read that walnuts would taste like taco meat but since there would be the aroma of tacos being made in my house I needed to just dive in and try it. Boy was I surprised. I had my maco and didn’t look twice at the actual taco meat that was screaming at me from across the kitchen!

Anyway, look how amazing these looked? And yes, I do need to work on my photographic and plating skills. I’m sure that using a real plate would be the first step to a better picture LOL Dust off your food processor and get ‘cooking’.

I just got this food processor, inexpensive and it works really well. There’s no need to spend a fortune on your kitchen equipment as long as you take care of it then it will serve you well!

Raw, vegan, gluten free "taco" meat.

Ingredients
  1. 1 cup walnuts
  2. 1/2 tsp cumin
  3. 1/4 tsp garlic powder
  4. dash of cayenne pepper
  5. dash of red crushed pepper
  6. 1/2 roasted red pepper
Instructions
  1. Add all dry ingredients and walnuts to food processor. Mix 10 seconds then stop and mix for 10 seconds again. Add roasted red pepper and mix again for 10-20 seconds until the walnuts and ingredients are all mixed into a chunky consistency.
  2. Grab some romaine, iceberg or butter lettuce to use as your wrap and add some maco 'meat', fresh guacamole, fresh tomatoes, sprouts or any other fruit or veggie that is calling your name!
